PECAN DELIGHT 
4 egg whites
1 3/4 tsp. baking powder
1/4 tsp. vanilla
1 c. sugar
2 c. saltine crackers, coarsely crushed
3/4 c. chopped pecans
Cool Whip topping

Beat egg whites, baking powder and vanilla until soft peaks form. Add sugar, 1 tbsp. at a time. Beat until stiff peaks form. Fold in crackers and nuts. Spread mixture in a greased 9 inch pie plate. Bake in a 325 degree oven for 35- 40 minutes or until lightly browned. Top with Cool Whip.
