PUMPKIN BREAD SANDWICH 
3 1/3 c. flour
1 tsp. salt
3 c. sugar
4 eggs
1/2 c. chopped nuts
2 tsp. baking soda
2 tsp. cinnamon
1 c. cooking oil
2 c. canned pumpkin

Mix dry ingredients. Make a well, add remaining ingredients. Mix until smooth. Divide batter into 2 loaf pans, greased and floured. Bake at 350 degrees for 1 hour or until over 75 minutes.

When cool, cut into thin slices and spread with softened cream cheese. Put 2 slices together to make a small sandwich.
