PUFFY FRENCH TOAST 
1 egg
1 c. milk
1 c. flour
1 tsp. baking powder
1/4 tsp. salt
1/2 tsp. vanilla
1/4 tsp. cinnamon (opt.)
Oil for frying

Beat eggs slightly; add remaining ingredients. Cut slices of bread in half diagonally. Dip bread into egg mixture and brown lightly in oil. Top with syrup, jelly, etc.; serve with sausage.
