STUFFED MANICOTTI 
1 pkg. manicotti noodles
1/2 lb. diced Mozzarella
1 c. ricotta
2 slightly beaten eggs
2 tbsp. soft butter
2 tbsp. grated Parmesan cheese
1 tsp. salt
1 tsp. pepper
2 tsp. chopped parsley
Spaghetti sauce (1 qt.)

Mix all ingredients together. Stuff uncooked noodles. Cover bottom of 9 x 13 inch pan with some spaghetti sauce. Place stuffed noodles in pan. Cover with remaining sauce. Sprinkle with Parmesan cheese. Bake, uncovered, at 325 degrees for 40 to 45 minutes.
