HASH BROWN POTATO CASSEROLE 
2 lb. bag frozen hash brown potatoes
1 stick butter
1 tsp. salt
1 tsp. pepper
1/2 c. chopped onion
1 can cream of chicken soup, undiluted
1 pt. sour cream
2 c. grated cheddar cheese

Thaw potatoes and add all other ingredients. Bake in a 3 quart casserole at 350 degrees for 1 to 1 1/4 hours, uncovered. You can top with buttered crumbs. The addition of 2 cups diced ham makes this an easy main dish.
