ZUCCHINI BREAD 
3 eggs
2 c. sugar
2 c. grated zucchini
2 tsp. vanilla
1 c. oil
1 tsp. baking soda
1 tsp. salt
1 c. nuts
1/2 tsp. baking powder
3 tsp. cinnamon
1 c. maraschino cherries
3 c. sifted flour, sifted twice

Beat eggs until light and foamy. Add zucchini, sugar, vanilla and oil. Add flour, soda, salt, baking powder and cinnamon. Stir in nuts and maraschino cherries which have been cut up. Pour into well greased and floured 2 loaf pans. Bake at 350 degrees for 1 hour or until bread leaves the side of the pan.
