SUGARLESS SPICE CAKE 
1 c. raisins
1 c. unsweetened applesauce
2 eggs, beaten
2 tbsp. liquid sweetener
3/4 c. vegetable oil
2 c. flour
1 tsp. baking soda
1 1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. vanilla
Whipped cream, optional

Cover raisins with water and cook until dry. Cool. Mix all ingredients and add cooled raisins. Pour into greased 8 x 8 inch square pan. Bake at 350 degrees for 25 minutes or until cake tests done. Serve with whipped cream if desired. (Sprinkle with 1/3 cup chopped nuts before baking.)

Diabetic Exchange - 1 serving without whipped cream equals 1 starch, 1/2 fruit, 2 fat.
