CHEESE SAUSAGE STUFFED POTATO SHELLS | |
1/2 lb. Eckrich smoked sausage 6 med. potatoes, baked 2/3 c. sour cream 1/3 c. chopped green onions 3/4 c. shredded Cheddar cheese 1 1/2 tbsp. Dijon mustard 1/4 to 1/2 tsp. pepper Preheat oven to 400 degrees. Slice off top of each potato lengthwise and scoop out potato pulp, leaving about 1/4 inch potato in shell. Combine potato pulp with remaining ingredients except sausage in medium bowl; mix well. Cut sausage into quarters lengthwise then out crosswise into 1/4 inch pieces. Stir into potato mixture. Fill potato shells. Bake 15 minutes or until cheese melts and potatoes are hot. Makes 6 servings. |
