RED AND RACY POTATO SALAD 
1 lb. small red potatoes
1 tbsp. minced red onion
1/2 cup red seedless grapes, halved
1/2 cup plain or low-fat mayonnaise (Vegannaise works great too)
2 tbsp. good-quality Dijon mustard (such as Maille)
1 tbsp. red wine vinegar
salt and pepper, to taste
pinch of fresh dill (optional)

Scrub red potatoes and boil with skin on until just tender. Let cool. Slice each one in half, and then in half once more. Add minced red onion and grapes and toss.

In a separate bowl, whisk together mayonnaise, Dijon mustard and wine vinegar. Pour mixture over sliced potatoes and mix well. Add salt and pepper, to taste, and a pinch of fresh dill, if desired.

Refrigerate one hour, serve, and enjoy!

Prep time is about 35 minutes; Serves 6.
