OATMEAL - COCONUT COFFEE CAKE 
1 1/2 c. boiling water
1 c. regular oats, uncooked
1/4 c. butter, softened
1 c. firmly packed brown sugar
1 c. sugar
2 eggs, slightly beaten
1 1/2 c. all-purpose flour
1 tsp. baking soda
1 tsp. salt
1 tsp. ground cinnamon
1 tsp. vanilla
:
1 c. flaked coconut
1/2 c. chopped pecans
1/2 c. butter, melted
1/2 c. firmly packed brown sugar
1/4 c. cream or milk
1 tsp. vanilla

Pour boiling water over oats; let stand 20 minutes. Cream 1/4 cup butter; gradually add 1 cup brown sugar and 1 cup sugar, beating well.

Stir in oats mixture. Add next 6 ingredients and mix well. Spoon into a greased 13 x 9 x 2 inch baking pan; bake at 350 degrees for 40 minutes or until a wooden pick inserted in center comes out clean.

Combine coconut and pecans; sprinkle mixture over cake. Combine remaining ingredients; pour over cake. Return to oven; broil 1-2 minutes or until golden brown. Cut into squares to serve.

Makes 15-18 servings.
