OATMEAL-COCONUT STREUSEL COFFEE
CAKE
 
2 (1 1/2 oz.) envelopes instant oatmeal with raisins and spice
1/4 c. packed brown sugar
2 tbsp. flaked coconut
6 tbsp. butter, at room temperature
1 1/2 c. all-purpose flour
2/3 c. granulated sugar
2 tsp. baking powder
1 lg. egg
3/4 c. milk

Heat oven to 375 degrees. Grease a 9-inch round layer cake pan. With a fork, mix oatmeal, brown sugar, coconut and 2 tablespoons butter in a small bowl.

In a large bowl, mix flour, granulated sugar and baking powder. Add remaining 4 tablespoons butter, the egg and milk. With electric mixer on medium speed or with wooden spoon, beat 1 minute or until well blended. Turn into prepared pan; sprinkle oatmeal mixture over top.

Bake 30 minutes or until pick inserted in center comes out clean. Cool at least 15 minutes before serving from pan. Makes 8 servings.
