ITALIAN CHEESECAKE LOWFAT AND
LOW CHOLESTEROL
 
1/3 c. graham cracker crumbs
3 (15 oz.) lite ricotta cheese
2/3 c. sugar
6 egg whites
1 1/2 tbsp. flour
2 tsp. grated lemon rind
2 tsp. rum extract
3 tbsp. slivered almonds
4 maraschino cherries, chopped
1 tbsp. raisins, chopped
2 dates, chopped

Spray 9 inch springform pan with Pam. Sprinkle crumbs evenly over bottom of pan. In food processor, process half at a time, cheese, sugar, egg whites, flour and flavorings. Carefully pour into pan. Sprinkle top with fruit and nuts. Put foil around bottom of pan to collect any leaks. Bake at 350 degrees for 55 minutes. Turn off oven. Remove cake after 30 minutes more. Cool and chill.
