CREAMY POTATO PUFFS 
1 (8 oz.) pkg. cream cheese
4 c. HOT mashed potatoes
1 beaten egg
1/3 c. finely chopped onion
1/4 c. chopped pimento (optional)
1 tsp. salt
Dash of pepper

Combine softened cream cheese and potatoes, mix until well blended. Add remaining ingredients. Place in casserole dish. Bake at 350 degrees for 45 minutes. May be prepared a day ahead and refrigerated. Serves 6 to 8.
