COCONUT CREAM PIE 
1 c. sugar
1/4 c. cornstarch
3 eggs, separated
1 2/3 c. milk
4 tbsp. butter
1 tsp. vanilla
1 1/4 c. coconut
1 (9 inch) pie shell, baked
4 tbsp. sugar

Combine sugar and cornstarch, beat yolks until lemon colored. Add milk and stir into sugar and cornstarch. Cook over medium heat. Stir constantly until thick. Remove from heat, add butter. Add vanilla and coconut. Pour into cooled pie shell. Top with meringue.

To make Meringue, use egg whites and 4 tablespoons of sugar.
