COCONUT CREAM PIE 
1/2 c. flour
1/2 c. sugar
1/2 tsp. salt
1 c. milk
3 eggs, separated
2 tbsp. butter
1/2 tsp. vanilla
1/2 c. coconut
1/3 c. sugar

Bake 8" pie shell. Mix first five ingredients and cook for 2 minutes. Add butter and vanilla. Beat egg whites until stiff. Gradually beat in 1/3 cup sugar until smooth. Stir coconut and 1/3 of meringue into hot mixture. Put filling in pie shell and cover with meringue, being sure to touch the edges of the crust all around. Bake at 350 degrees for 12 to 15 minutes.
