MOOSE NUGGET COOKIES 
2 1/4 c. flour
2 tsp. baking soda
1 tsp. ground ginger
1 tsp. allspice or cinnamon
3/4 c. butter flavor shortening
1 c. packed brown sugar
1 egg
1/4 c. molasses (opt.)
1 tsp. finely grated lemon peel
1/2 c. sugar

Mix the dry ingredients and set aside. Beat together shortening and brown sugar until fluffy. Then add the molasses if lemon peel is added. Beat in very well. Then add dry ingredients. It will be a stiff dough.

Roll by hand into 1" to 1 1/2" balls then roll the balls in the sugar that was set aside. Bake on ungreased cookie sheet at 375 degrees for 8 to 10 minutes. Makes 4 dozen.
