ZUCCHINI CASSEROLE 
2 c. shredded zucchini
1 sm. onion, chopped
1 egg, beaten
1/2 tsp. salt
Dash of pepper
1 1/2 c. cracker crumbs (saltines)
1 stick butter
3/4 c. cheese, shredded

Melt butter. Mix in cracker crumbs. Reserve some butter crumbs and a little cheese for the top of the casserole. Mix all the remaining ingredients. Place in buttered casserole dish. Top with reserved crumbs and cheese. Bake at 325 degrees for 1 hour. Serves 6 to 8.
