BRUSSELS SPROUTS AU GRATIN 
1 1/2 qt. water or enough to cover sprouts
1 tbsp. salt
1 qt. brussels sprouts, washed
3 tbsp. butter
3 tbsp. flour
1 1/2 c. half and half, heated
1 tsp. salt
1/2 tsp. white pepper
1/16 tsp. (pinch) nutmeg
1/2 c. grated Swiss cheese
1/2 c. bread crumbs

Add salt to water; and bring to boil. Add sprouts and bring to boil again. Cover and continue cooking for 10 to 12 minutes, or until sprouts are tender. Drain. Melt butter in small saucepan and blend in flour. Stir and cook together for two minutes. Whisk in the hot half and half. Season with salt, white pepper and nutmeg. Let simmer for a minute. Blend in grated cheese and keep warm. Bake in oven proof baking dish, buttered. Cut sprouts in half and lay open side up in dish. Pour hot sauce over and sprinkle with bread crumbs. Bake in preheated oven, 325 degrees for 30 minutes or until top is browned.
