ANDY'S WHEATLESS COOKIES 
1/3 c. shortening
1/2 c. sugar
1 egg
1/2 tsp. vanilla
1 1/4 c. barley or oat flour
1/2 tsp. baking powder
1/2 tsp. salt

Mix together the above and chill for at least one hour. Roll and cut into shape or drop in little balls with a teaspoon. Put sprinkles on top if desired. Bake 8 to 10 minutes at 375 degrees. Makes about 38 cookies (2 inches).
