Remove the stems from the poke sallet. Place in a large pan and parboil the greens, letting the greens cook down. Add a little soda to make the greens cook better. Boil until the greens go down and the water looks green, about 3 minutes or longer. Drain off the water. Place the poke in a large pot and add just enough water to keep the poke from sticking. Cook for about 1 hour and 30 minutes.
In a skillet heat a small amount of grease. Add the poke and cook until you think it's almost done. Add 3 or 4 eggs and cook until the eggs are done.
