MY GREAT GRANDMOTHER'S CHOCOLATE
PIE
 
1 c. + 4 tbsp. sugar
1/3 c. flour
5 tbsp. cocoa
2 c. milk
1/2 c. evaporated milk
Pinch salt
3 eggs, separated
3 tbsp. butter
1 tsp. vanilla

Mix sugar, flour, cocoa and milk in heavy saucepan. Cook over low heat, stirring constantly. When thick, add 3 egg yolks beaten slightly (add a little milk mixture to yolks first). Add evaporated milk. Cook until almost boiling. Add 3 tablespoons butter and 1 teaspoon vanilla. Cool. When cool, put in baked crust. Top with 3 egg whites with 4 tablespoons sugar beaten in until stiff. Bake at 300 degrees for 15 minutes.
