ARKANSAS COFFEE CAKE | |
1/2 c. Chef-Way shortening 1 tsp. vanilla 3/4 c. sugar 3 eggs 2 c. sifted all-purpose flour 1 tsp. baking soda 1/4 tsp. salt 1/2 pt. commercial sour cream 6 tbsp. butter, softened 1 c. firmly packed brown sugar 2 tsp. cinnamon 1 c. chopped pecans Cream together shortening and vanilla; add sugar and beat until fluffy. Add eggs, one at a time, beating after each addition. Sift flour, baking powder, soda and salt together. Add to creamed mixture alternately with sour cream beating only until batter is smooth after each addition. Cream butter, brown sugar and cinnamon together. Add nuts and mix well. Spread half of batter in 10 inch tube pan that has been greased and floured. Sprinkle 1/2 of brown sugar mixture over batter in pan. Cover evenly with remaining 1/2 of batter and top with remaining 1/2 of brown sugar mixture. Bake in 350 degree oven for 45-50 minutes. Cool in pan. |
