HONEY PEACH COBBLER 
1 1/2 lb. peaches, peeled, pitted and sliced
1 1/2 tbsp. lemon juice
1/4 cup honey
1 tbsp. each cornstarch and water, stirred together
1 1/2 tbsp. butter

Place peaches in 1 1/2 quart baking dish. Stir in lemon juice, honey and cornstarch-water mixture. Dot with butter.

Prepare Whole Wheat Topping. Drop by spoonfuls onto peach mixture.

Bake at 400°F until puffy and richly browned, about 30 minutes.

WHOLE WHEAT TOPPING:

1/2 cup plus 2 tbsp. whole wheat flour
1 tsp. baking powder
1/4 tsp. salt
1/2 tsp. cinnamon
1/8 tsp. nutmeg
2 tbsp. firm butter
1/4 cup milk
2 tbsp. honey

Sift together flour, baking powder, salt, cinnamon and nutmeg. Cut in butter until uniformly blended.

Stir together milk and honey. Add to flour mixture and stir until well blended.
