LEMON CRINKLE COOKIES 
1/2 c. shortening
1 c. brown sugar, packed
1 egg
1 tbsp. grated lemon rind
1 1/2 c. flour
1/2 tsp. baking soda
1/2 tsp. cream of tartar
1/4 tsp. ground ginger
Pinch salt
2 tbsp. sugar

Cream shortening and brown sugar until fluffy, add egg and lemon rind, beating well. Combine flour, soda, cream of tartar, ginger and salt. Stir dry ingredients into cream mixture. Roll dough into 1" balls, roll in sugar. Place 2" apart on ungreased cookie sheets. Bake at 350 degrees for 10 to 12 minutes.
