CARAMELIZED POTATOES 
8 med. potatoes, peeled & cooked
1/4 c. sugar
1/4 c. butter
2 tsp. grated orange rind

Heat sugar in an iron skillet over low heat until melted. Stir in butter and stir until melted and smooth. Toss potatoes in skillet until coated. Put in bowl and sprinkle with grated orange rind.
