AUTUMN APPLE CAKE 
3 medium-size apples, peeled, cored and chopped
1 cup sugar
1 1/2 cups cake flour
1 tsp. baking soda 1/2 tsp. salt
1/2 tsp. nutmeg
1/2 tsp. allspice
1/2 cup (1 stick) butter, melted
1 egg

Peel and core apples. Coarsely chop and measure 1 3/4 cups apples into a large bowl. Add sugar; let stand 10 minutes.

Sift flour; measure. Add baking soda and spices; mix together. Blend butter and egg into apple mixture. Add flour mixture; mix just until blended.

Bake in a greased 8-inch square pan at 350°F for 45 minutes, or until toothpick comes out clean after testing.

Cool on cake rack. Sprinkle top with confectioners' sugar, if desired.
