ZUCCHINI CASSEROLE 
3 c. thinly sliced zucchini, 4 sm. or 2 lg.
1 c. Bisquick baking mix
1/2 c. finely chopped onion
1/2 c. grated Parmesan cheese
2 tbsp. parsley
1/2 tsp. salt
1/2 tsp. seasoned salt
1/2 tsp. oregano
Dash of pepper
1 clove garlic, finely chopped
1/2 c. vegetable oil
3 eggs, slightly beaten

Grease pan. (Oblong works well). Mix all dry ingredients. Add onion, zucchini, garlic, eggs and oil. Mix well. Spread in pan. Bake at 350 degrees for 30 minutes or until lightly browned on top.
