BAKED STUFFED ZUCCHINI 
2 lg. zucchini
1/2 c. tomato sauce
Parmesan cheese
1 tbsp. olive oil
1/2 c. bread crumbs
1 tbsp. oregano

Cut each zucchini in half. Scoop out and reserve center seeds and 1/4 inch thick inside of zucchini. Parboil zucchini boats.

In a saucepan heat and simmer tomato sauce, cheese, oil, bread crumbs, oregano and zucchini insides, stirring occasionally. Spoon mixture into zucchini halves. Bake in pan with a little water on bottom, covered with aluminum foil, for 30 minutes at 350 degrees.
