5 pounds hamburger 5 rounded teaspoon Mortons Tender Quick Salt 2 1/2 teaspoons mustard seed 2 tablespoons coarse pepper 2 tablespoons garlic salt 1 teaspoon Hickory Smoked Salt Mix seasoning well and divide into four equal amounts. Divide meat into four equal parts as well. Mix the seasoning and the meat together by combining 1/4 meat with 1/4 seasoning and when all portions are well mixed, combine all four together and mix well. Put into a 9 x 13 pan and cover tightly and refrigerate. Knead well each day for 3 days. On the fourth day knead well and divide into 5 equal rolls. Place on rack in broiler pan, set oven at 150°F and bake. Turn over at 4 hours. Cook 8 to 8 1/4 hours. |
