POTATO CHIP COOKIES 
1 c. shortening or butter
1 c. brown sugar
1 c. white sugar
2 eggs
1 tsp. vanilla
2 c. oatmeal
2 c. flour
1 tsp. baking soda
1/4 tsp. salt
1 c. crushed potato chips
1 c. chopped nuts, if desired

Cream together the shortening, sugars, eggs, and vanilla. Add the flour, soda, salt and mix well. Add the oatmeal and mix. Blend in the crushed potato chips and nuts, and mix well. Shape into small balls, flatten with glass dipped in sugar. Bake at 350 degrees until slightly brown. 8-10 minutes.
