GERMAN POTATO SALAD 
4 large potatoes, cooked and sliced
1/4 cup chopped onion
1/2 cup chopped celery
1/4 cup dried parsley
6 slices bacon, diced and fried

Dressing:

small amount of bacon drippings
1/4 cup vinegar
2 tsp. flour
1/4 cup sugar
1 tsp. salt
3/4 cup water
1/8 tsp. pepper
1 tsp dry mustard

Combine potatoes, parsley, celery and onion. Brown bacon and drain reserving some drippings for dressing. Add bacon to potato mixture. In a pan, combine drippings, vinegar, sugar, flour, water, salt, pepper and mustard. Bring to a boil. Remove from heat and add to potato mixture and fold it in. Serve warm.
