BAKED GERMAN POTATO SALAD 
1 c. diced bacon
1 c. chopped onion
3 tsp. salt
1/2 tsp. pepper
3 tbsp. flour
2/3 c. sugar
2/3 c. vinegar
1 1/3 c. water
8 c. cooked potatoes (diced)

Fry bacon and drain. Return 4 tablespoons bacon fat to skillet. Add onions, salt and flour. Cook gently. Add sugar, vinegar, pepper and water. Bring to a boil. Put potatoes and bacon in 3 quart baking dish. Pour cooked mixture on potatoes and stir. Cover. Bake 30 minutes at 350 degrees. Serves 12. (The recipe 1 1/2 times fits well into 4 quart casserole).
