BAKED GERMAN POTATO SALAD 
1 c. diced bacon
1 c. diced celery
1 c. chopped onion
3 tsp. salt
1/2 tsp. pepper
3 tbsp. flour
Less than 2/3 c. sugar or to suit taste
2/3 c. vinegar or to suit taste
1 1/3 c. water
8 c. cooked potatoes, in slices

Fry bacon; drain and dice. Return 4 tablespoons bacon fat to skillet. Add celery, onions, salt, and flour. Cook gently. Add sugar, vinegar, pepper, and water. Bring to a boil. Pour over potatoes and bacon in a 3 quart baking dish. Cover and bake 30 minutes at 350 degrees. Serves 12. This dish can be prepared the day before and baked just before serving it.
