PINEAPPLE CHICKEN ORIENTAL 
8 oz. raw chicken breast, cut in sm. pieces
1 clove garlic, minced
Oil
4 tbsp. onion, chopped
1 c. celery, chopped
1 c. green pepper, chopped
1 c. chicken broth
1 tsp. ginger
1/2 c. pineapple tidbits, drained (reserve juice)
1/2 tsp. salt
2 tbsp. pineapple juice
1 tbsp. soy sauce
2 tsp. cornstarch

Stir fry onion and garlic in oil. Add the chicken, celery and green pepper. Stir fry for 5 minutes. Add broth, ginger, pineapple and salt. Mix pineapple juice, soy sauce and cornstarch together. Add to the chicken and cook until thickened. Can be served over rice or oriental noodles. Serves 2.
