PINEAPPLE CHICKEN 
2 chicken, broiler-fryer, cut up thawed
1 1/4 c. flour, wheat, general purpose, sifted
3 3/4 tsp. soy sauce
2 c. pineapple, canned, crushed
2 tsp. sugar, granulated
1/2 c. juice, pineapple

Wash chicken pieces thoroughly under cold running water. Drain well. Dredge chicken pieces in flour; shake off excess. Fry in deep fat 5 minutes. Place chicken, skin side up in pan. Combine soy sauce, pineapple, sugar, and pineapple juice; spread half over top of chicken in each pan. Cover pans. Bake 1 1/4 hours or until done at 350 degrees. Serves 8.
