PINEAPPLE CHICKEN (Lo-Cal) 
3 lbs. chicken, cut up and skin removed
1 (8 oz.) can crushed pineapple
2 tsp. dry minced onion
2 tbsp. orange juice
2 tsp. cornstarch
1 bell pepper, cut into strips
1/4 c. soy sauce

Mix together undrained pineapple, onion, soy sauce, bell pepper; pour over chicken in a baking dish. Bake at 350 degrees for 45 to 50 minutes uncovered. Baste often with juices in which the chicken is cooking.

Mix together 1/2 cup pan juices, orange juice and cornstarch. Heat until thickened. Pour over chicken and continue cooking for 10 to 15 minutes covered. Serves 6.
