PINEAPPLE CHICKEN 
2 boneless chicken breasts
2 tbsp. flour
1 tsp. salt
1/4 tsp. pepper
3 tbsp. oil
2 tbsp. soy sauce
1 tbsp. cornstarch
1 tsp. vinegar
1 (#2) can pineapple chunks

Cut chicken in 1 inch strips. Toss with mixture of flour, salt, and pepper. Drain pineapple, reserving 1/2 cup of juice. Heat oil in skillet; saute chicken 5 minutes. Mix together soy sauce, cornstarch, vinegar, and pineapple juice. Stir into pan, stir until thickened. Serves 4.
