PEAR MINCEMEAT 
6 lbs. pears (chopped very fine)
3 lbs. sugar
2 tbsp. salt
2 tbsp. cinnamon
2 tsp. cloves
Juice of 1 orange
1 whole orange (skin and pulp chopped fine)
2 lbs. seedless raisins
1 c. vinegar

1. Cook all ingredients until tender, stirring occasionally (about 40 to 60 minutes).

2. Pour into clean hot jars and seal. Yields 6 to 8 pints.
