7 - LAYER CASSEROLE 
1 c. uncooked reg. rice
1 (12 oz.) can corn
1 tsp. salt
1/8 tsp. pepper
1 (15 oz.) tomato sauce
1/2 c. water
1/2 c. finely chopped onions
3/4 lb. ground beef
1/2 tsp. salt
1/8 tsp. pepper
1/4 c. water
4 strips bacon, cut in half

Layer ingredients in 2 quart baking dish in this order - rice, corn with liquid, 1 teaspoon salt, 1/8 teaspoon pepper, 1/2 can of tomato sauce, 1/2 cup water, onions, ground beef, 1/2 teaspoon salt, pepper, tomato sauce and 1/4 cup water. Cover meat evenly with bacon. Cover casserole.

Bake at 350 degrees for 1 hour. Uncover and continue to bake for 20 minutes or until bacon is crisp.

I grew up with this dish and love making it. However, your version is 4 or 5, not 7 layers. Count them! This is a great summer dish when you're trying to use up garden produce: green beans, carrots, sliced potatoes (skip the rice), peas, celery, zuchini slices, etc. In the winter, you can still get most of the produce at the supermarket.
