PEA SALAD 
2 lg. bags frozen early peas (I use just 1), thawed, do not cook
1 can sliced water chestnuts, drained
3 stalks celery, chopped (more or less as desired)
1 lb. fried crisp bacon, cut into chunky pieces
1 sm. onion, diced
3-4 hard-boiled eggs, sliced
Salt and pepper

Mix all ingredients and toss with mayonnaise; start with 2 tablespoons Hellmann's and make consistency as desired.
