K & W COCONUT PIE 
1 c. plus 1 oz. sugar
3 c. milk
1/3 c. or 5 tbsp. cornstarch
2 tbsp. butter
2 lg. or three med. eggs
1/8 tsp. salt
2 to 3 drops yellow food coloring
3 oz. medium-shredded coconut (about 2/3 cup)
1 tsp. vanilla

Pour one cup milk into double boiler with cornstarch, salt, eggs, butter and sugar. Mix well with hand whip. Add 2 cups milk and cook over medium heat, stirring well, until thickened. Add vanilla and coconut. Do not overmix at this point. Pour into a baked pie shell and bake at 375 degrees for 20 minutes.
