APPLE CIDER PIE 
1 pre-baked pie shell
2 c. apple juice concentrate
Pinch of salt
5 tbsp. cornstarch
3 egg yolks, lightly beaten
3 tbsp. butter

MERINGUE MIXTURE:

3 egg whites
Pinch of salt

Don't beat too stiff. Heat 1 1/2 cups apple juice concentrate in double boiler to simmer. Add salt; dissolve cornstarch in remaining 1/2 cup of apple juice and add to mixture. Stir in egg yolks and butter. Stir frequently until thick. Remove from heat and fold in beaten meringue mixture. Pour in pre-baked pie shell, chill and serve. This is a no sugar treat. It has a tart sweetness similar to a lemon meringue but much better and very quick and easy.
