APPLE CIDER PIE 
2 2/3 c. apple cider
2 2/3 lbs. Granny Smith apples (about 7), peeled, cored and sliced
12 oz. Golden Delicious apples (about 1 1/2), peeled, cored and sliced
1 c. sugar
1/4 c. flour
1/2 tsp. cinnamon
1/4 tsp. mace
1/2 tsp. nutmeg
1/4 tsp. salt
4 tsp. lemon juice
3 tbsp. butter

Boil cider until reduced to 2/3 cup, about 25 minutes. Cool. Combine apples, sugar, flour, cinnamon, mace, nutmeg, salt and lemon juice. Add cider and toss well. Spoon into 10 inch crust lined pan. Dot with butter.

Roll on top crust. Bake at 425 degrees for 25 minutes. Reduce heat to 350 degrees and continue baking until brown. Serve warm.
