SALMON PATTIES 
1 (15 1/2 oz.) can salmon, drained and broken into chunks; bones removed
1 med. onion, chopped
1/2 c. dry bread crumbs
2 eggs, beaten
Salt and pepper to taste
3 tbsp. butter
3 tbsp. oil
Parsley sprigs

In a deep bowl, combine all ingredients except butter, oil, and parsley. Form mixture into patties. Fry on both sides until golden brown, turning once. Drain on paper towel. Garnish with parsley sprigs.
