SESAME SEED CAKES
4 c. all-purpose flour
1 c. sugar
1 1/2 c. vegetable shortening
1 tsp. ammonia powder
3/4 c. milk
3/4 c. sesame seeds, washed, drained, and mixed with 3 tbsp. sugar

Place flour and sugar in a bowl. Cut in shortening with a pastry blender or work dough with hands until mixture resembles coarse meal. Dissolve ammonia powder in 1/2 cup of milk and add to flour mixture. Gradually add more milk, mixing until dough holds together. Cut small portion of dough and roll between palms of hands into long, 1-inch diameter ropes.

Roll ropes in sesame seeds mixed with sugar, then flatten out to about 1/4 inch thickness. Cut into small strips about 2 inches each and place on greased baking sheet and bake at 350 degrees for about 20 to 25 minutes. Remove to a wire rack and let cool completely, then be sure to sore cookies in an airtight container. Yields: about 7 dozen.
