MOM'S SWEET AND SOUR PORK 
1 1/2 lb. lean pork, cut in strips approx. 2x1/2"
1/4 c. water
2 tbsp. cornstarch
1/4 c. brown sugar
1/4-1/3 c. vinegar
1 c. pineapple juice
1 tbsp. soy sauce
3/4 c. green pepper, cut in strips
1/4 c. chopped onion
1 #2 can pineapple chunks

Brown pork. Add water and cover; simmer for 1 hour. Combine cornstarch, brown sugar, vinegar, pineapple, juice and soy sauce. Mix and cook until slightly thick, stirring constantly. Pour over hot pork and let stand 10 minutes. Add green pepper, onion and pineapple. Cook 2-3 minutes. Serve over rice.
