FRESH CORN CASSEROLE 
6 slices bacon
4 c. fresh corn cut from cob (about 8 ears)
1 c. chopped green peppers
1/2 c. onion, chopped
2 med. tomatoes, peeled and chopped
1 tsp. salt
1/2 tsp. black pepper

Cook bacon until crisp, drain and crumble. Save 2 tablespoon grease in skillet; add corn, green pepper and onion. Cook on high for 5 minutes stirring often; then add bacon, tomatoes, salt and pepper. Pour into a greased 2 quart baking dish and bake for 15 minutes at 250 degrees.
