CAPPUCCINO CHEESE CAKE 
Chocolate crumb crust (below)
2 1/4 lbs. cream cheese
1/4 c. heavy cream
1 1/2 tsp. vanilla
1 c. sugar
5 eggs, slightly beaten
1 oz. semi sweet chocolate
1/4 c. double strength coffee
3 tbsp. Kahlua (coffee liqueur)
1/2 tsp. lemon juice

Set oven temperature at 350 degrees. Spread butter on sides and bottom of a 9" springform pan.

To Prepare Cookie Crust: Grind 8 to 9 ounces chocolate cookies well. Mix in 1/3 cup melted butter. Press mixture on bottom and sides of pan; cool.

Cut cream cheese into cubes and place into large mixing bowl. Beat with cream and vanilla. Add sugar. When mixed, add eggs and beat well. Mix in coffee, Kahlua and lemon juice. Pour into crumb crust.

Bake for 35 minutes, lower temperature to 325 degrees and continue to bake 30 to 40 minutes more, or until set. Cool before removing from pan.
