OXTAIL SOUP 
2-3 lb. oxtails
4 c. water
1 onion, diced
1 bag frozen mixed vegetables
3 potatoes
1 can whole tomatoes
Salt and pepper to taste

Cook Oxtails in 4 cups of water with salt, pepper, and onions until done. Add diced potatoes, mixed vegetables, and tomatoes. Cook for 35 minutes or until vegetables are done.
