ZUCCHINI RELISH 
10 c. ground zucchini
4 c. ground onion
2 1/2 c. cider vinegar
5 tbsp. salt
1 tbsp. turmeric
1 tbsp. nutmeg
2 tbsp. cornstarch
1/2 tsp. pepper
6 c. sugar
2 tbsp. celery salt

Grind zucchini and onions. Add salt and let stand overnight. Drain and rinse in cold water. Drain again. Add remaining ingredients. Cook 30 minutes. Stir often. Seal in jars while hot.
